Homemade Sweet Potato Fries


8 medium sweet potatoes

6 tbsp avocado oil

1 ½ tsp salt

1 tsp pepper

paprika ½ tsp (optional)

garlic powder ½ tsp (optional)

pinch corn starch


Preheat oven to 450 degrees F

Peel or scrub sweet potato.  Chop the sweet potato into slices and then cut each slice into sticks.  Ensure the sticks are thick enough to avoid burning.  Place sweet potato sticks into bowl.  Add oil, salt, pepper and your favorite seasonings.  Toss oil and seasonings until evenly spread over the sweet potatoes.  Add a pinch of corn starch.  Preheat baking sheets and (optional) line with tinfoil to aid in browning.  Do not crowd sweet potatoes and will need use up to 4 baking sheets.  Rotate once.  Keep close eye on fries to avoid burning.  Some ovens run hot, if your oven tends to do this 425 degrees F is a better cooking temperature.      

Bake 15-20 min.
